Smoothie bowl season is almost upon us and this is giving us all of the summer feels. The secret ingredient in here is *CAULIFLOWER* which, when steamed then frozen, has a neutral taste, adds thickness, and allows us to add less fruit without sacrificing taste. Use this recipe as a template to mix and match your favorite fruits, seeds, and nut butters.
Blueberry Smoothie Bowl
Yields: 1 serving
1/2C wild blueberries
1/2C steamed then frozen cauliflower (flourets or rice works fine)
1TBSP almond butter
1/2C unsweetened almond milk
1/2C unsweetened canned coconut milk
1 serving vegan chocolate protein powder
Optional: 1C raw spinach
Add all ingredients to a blender and blend until ice cream like texture. Add more coconut milk if too thick, or add a few ice cubes if too runny. Top with fresh raspberries, 1/2 TBSP hemp seeds, and a drizzle of almond butter.
