One of my favorite ways to add flavor and change up my salads is by using leftover sauces (that I like to make in batches) throughout the week. Our cherry tomato sauce that we posted earlier this week is the perfect salad topping during the summer! Quick, healthy, and absolutely delicious (either warm OR cold). Mix it up with whatever ingredients you like or have on hand, but below is a rendition that we love!
Serves 1
2 C. chopped romaine lettuce
1 chicken breast, grilled or roasted
1/4 C. cilantro, roughly chopped
1/2 C. - 1 c. cherry tomato sauce (see our recipe here)
1/4 C. sliced raw red onions
1/2 C. chopped raw carrots
Lemon pepper to taste (we love the one from Trader Joe's)
EVOO + balsamic vinegar for dressing, to taste
Add chopped romaine to a big salad bowl and top the remaining ingredients. Add a generous amount of lemon pepper seasoning, and drizzle with a good extra virgin olive oil and balsamic vinegar. Enjoy!
