Strawberry Salsa


Who says mango is the only fruit for salsa?! No longer. I saw a recipe for strawberry salsa while flipping through this month's Martha Stewart Living (one of my favorite magazines!) and I knew I had to try making my own version. The sweetness of the strawberries mixed with the spice of the jalapeños and red onions is the perfect balance - not too sweet, not too savory. Close your eyes, and you may have trouble figuring out that it's strawberries you're eating.


Strawberries have always been my favorite fruit, and summer is when they peak. The key to making strawberries the focal point of a dish is ripeness - they should be a deep red, and juicy without being overripe (nobody wants that). This is a fabulous dish to make for that 'wow, that's different' factor, and would be perfect to make this weekend for the Fourth of July. I hope you like it as much as I do!

Yield: about 2 cups of salsa

2 c. ripe strawberries, diced

1/2 c. red onions, diced

1/4 c. fresh cilantro, chopped

1/2 jalapeño, diced (remove seeds if you're sensitive to heat)

1 Tbs. fresh squeezed lime juice

Sea salt, to taste


Combine strawberries, onions, cilantro, jalapeño and lime in a bowl. Mix, and season with salt to taste (I do about 2 generous pinches). Serve with tortilla chips. Enjoy!
